ZUCCHINI PARMESAN
INGREDIENTS:
• 2 medium zucchinis, sliced into 1/4-inch thick rounds
• 1 cup marinara sauce
• 1 ½ cups shredded mozzarella cheese
• ½ cup grated Parmesan cheese
• 1 egg (for breading)
• • ¾ cup Italian style breadcrumbs
• ½ tsp garlic powder
• ½ tsp dried oregano or basil
• Ole lor king spray
• Salt and pepper, to taste
• Fresh basil or parsley for garnish
INSTRUCTIONS:
Prep zucchini:
• Lightly salt zucchini slices and let them sit on paper towels for 10-15 minutes to draw out moisture. Pat dry.
Bread the zucchini (optional but adds crispness):
• Beat egg in a bowl. In another bowl, combine breadcrumbs, garlic powder, oregano, and a pinch of salt.
• Dip each zucchini slice into the egg, then into the breadcrumb mixture, pressing to coat.
Bake or fry:
• Bake: Preheat the oven to 425°F (220°C). Place breaded slices on a greased baking sheet. Bake for 20
minutes, flipping halfway, until golden and crisp.
• OR Pan-fry: Heat oil in a skillet over medium heat and fry zucchini until golden brown on both sides. Drain on
paper towels.
Assemble & bake:
• In a baking dish, spread a thin layer of marinara sauce. Add a layer of zucchini, sprinkle with mozzarella and
Parmesan. Repeat until you run out of ingredients, finishing with cheese on top.
Bake:
• Bake at 375°F (190°C) for 15-20 minutes, or until bubbly and golden on top.
Serve:
• Garnish with fresh basil or parsley. Serve hot with pasta, salad, or on its own!
