Spiced Paula Red Apple Butter
Ingredients:
5 lbs Paula Red apples (about 12-14 medium), peeled, cored, and roughly chopped
1 cup granulated sugar
1 cup packed brown sugar
1 cup apple cider
1 tbsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/4 tsp salt
Instructions:
Place the chopped Paula Red apples in a large slow cooker.
In a medium bowl, whisk together the granulated sugar, brown sugar, cinnamon, cloves, nutmeg, and salt. Sprinkle the mixture over the apples and toss to coat.
Pour the apple cider over the mixture.
Cover and cook on low for 10 hours, or until the apples are very soft and dark brown (refer to the rich color in Image 3).
Puree the mixture using an immersion blender until perfectly smooth.
If the apple butter is too thin, continue to cook on low, uncovered, for another 1-2 hours, stirring occasionally, until it reaches your desired thickness.
Spoon the hot apple butter into clean jar (like the Mason jar shown in Image 3). Allow to cool before sealing. Store in the refrigerator for up to 3 weeks or freeze.
