CARROT CAKE ZUCCHINI MUFFINS
INGREDIENTS:
• 1 cup grated zucchini
• 1 cup grated carrots
• 2 large eggs
• 1 tsp vanilla extract
1 tsp baking powder
• 1/2 tsp baking soda
• 1 tsp ground cinnamon
DIRECTIONS:
Grate zucchini and carrots:* Prepare ingredients.
Mix wet ingredients:* Combine eggs and vanilla extract.
Mix dry ingredients:* Combine baking powder, baking soda, and cinnamon.
Combine mixtures:* Mix wet and dry ingredients with grated zucchini and carrots.
Bake: Pour into muffin tin and bake until golden. Classic Boiled Corn on the Cob.
