 Burrata, Basil & Peach Panzanella


INGREDIENTS


• 4 cups bread cubes

• 1 cup cherry tomatoes, sliced

• 3 peaches, thinly sliced

• 8 ounces burrata cheese

• 1 handful fresh basil leaves


• Basil Vinaigrette: 


1 cup tightly packed basil leaves

1 garlic clove, minced

1 tsp. lemon juice

½ tablespoon apple cider vinegar

big pinch kosher salt and pepper

cup olive oil


DIRECTIONS


Preheat the oven to 350°F. 

Place bread cubes on a baking sheet and bake for 10–15 minutes, until slightly toasty.

Blend all vinaigrette ingredients until smooth. 

Place toasted bread in a bowl or large platter. 

Drizzle with 2–3 tablespoons vinaigrette and toss so the bread absorbs some of it. 

Toss peach slices and cherry tomatoes with a pinch of salt and pepper. 

Drizzle with more vinaigrette. 

Add burrata on top, drizzle with vinaigrette again, and finish with fresh basil leaves.
