- 2 large Gala apples, peeled and finely chopped
- Orange juice to soak apples in
- 3 cups all purpose flour
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup sugar
- 1 cup The Shoreline Vine Extra Virgin Olive Olive Oil
- 2 large eggs
- 2/3 cup gold raisins, soaked in warm water for 15 minutes and drained well
- Confectioner's sugar for dusting
Preparation:
- Preheat oven to 350 degrees. Place chopped apples in a bowl and add enough orange juice to toss and coat.
- In a large mixing bowl sift together flour, cinnamon, nutmeg, baking powder and baking soda. Set aside.
- In a separate bowl (using a stand or hand held mixer) mix together sugar and olive oil on low for approximately 2 minutes until fully combined.
- While mixer is on, add the eggs, one at a time, and continue to mix another 2 minutes. Mixture should increase in volume (thick but still runny). Get the bowl with the dry ingredients and make a dent in the middle of the flour mix. Add the wet mix into the well. Using a wooden spoon stir until just blended. It will be a thick batter.
- Add the drained raisins and apples (getting rid of any excess orange juice) and mix until fully combined. Line a 9 inch cake pan with parchment paper. Spoon the thick batter into the pan, and level the top with the back of the spoon. Bake for 45 minutes or until tooth pick comes out clean. Cool completely in pan. When ready, lift parchment paper up to transfer cake onto serving dish. Dust with confectioner's sugar & serve!
