This is apparently Brad's recipe and we don't have a picture so if you make it please take one and send it to Brad so we can put it on the blog. In the meantime, I have added a picture of corn!
Yield: 4 servings
Ingredients:
- 4 ears fresh corn (3 cups) husked and cooked and then cut from the cob
- 2 tbs olive oil
- 1 jalapeno stemmed, seeded and finely chopped
- ½ cup chopped cilantro leaves
- 1/3 cup diced red onion
- 2.5 oz Cotija Cheese finely crumbled plus extra for sprinkling
- 1 avocado peeled, cored and diced
Dressing Ingredients:
- ½ tbs fresh lime juice
- 2 ½ tbs mayonnaise
- 1 ½ tbs fresh lime juice
- 1 clove garlic minced
- ½ tsp cayenne pepper
- Salt and pepper to taste
Whisk dressing ingredients together. Combine with salad ingredients and chill. Served best cold!
