Mexican Street Corn Salad with Avocado



This is apparently Brad's recipe and we don't have a picture so if you make it please take one and send it to Brad so we can put it on the blog.  In the meantime, I have added a picture of corn!

Yield: 4 servings

Ingredients:
  • 4 ears fresh corn (3 cups) husked and cooked and then cut from the cob
  • 2 tbs olive oil
  • 1 jalapeno stemmed, seeded and finely chopped
  • ½ cup chopped cilantro leaves
  • 1/3 cup diced red onion
  • 2.5 oz Cotija Cheese finely crumbled plus extra for sprinkling
  • 1 avocado peeled, cored and diced


Dressing Ingredients:

  • ½ tbs fresh lime juice
  • 2 ½ tbs mayonnaise
  • 1 ½ tbs fresh lime juice
  • 1 clove garlic minced
  • ½ tsp cayenne pepper
  • Salt and pepper to taste


Whisk dressing ingredients together.  Combine with salad ingredients and chill.  Served best cold!
