
Mitake Mushrooms (Hen-of-the-Woods Mushroom) do not have that squeaky texture, but rather a delicate and feathery texture. The Maitake has a white base that is a little tough and it is the piece of the mushroom that grows into the ground so go ahead and cut that part off. You can freeze it and use it in a mushroom stock later if you want.
Ingredients:
1 pound hen-of-the-woods mushrooms (see note)
2 tablespoons butter
2 tablespoons olive oil
2 large shallots, finely chopped
1 large garlic clove, finely chopped
1 teaspoon fresh thyme leaves (no stems), finely chopped
Salt and pepper to taste
Preparation:
- Brush any soil off mushrooms; cut mushrooms into 1-inch dice.
- Melt butter with oil in large skillet over medium-high heat. When butter stops sizzling, add mushrooms; sauté until tender, about 4 minutes. Add shallots, garlic, thyme, salt and pepper. Sauté 2 minutes and serve.
