Ingredients:
- ½ cups Margarine, Softened
- 2 cups Sugar
- 2 Eggs, Room Temperature
- 2 cups Flour
- ⅓ cups Orange Juice
- 1 teaspoon Baking Soda
- 2 teaspoons Baking Powder
- ½ teaspoons Salt
- 1 teaspoon Cinnamon
- ⅛ teaspoons Nutmeg
- 1 teaspoon Vanilla
- 2 cups Cortland Apples, Grated
Preparation:
Preheat the oven to 350ºF.
In a large bowl, add margarine, sugar, and eggs. Beat ingredients until fluffy. Add the remainder of ingredients, folding in the grated apples last.
Spray a 9×13 cake pan with cooking spray and line the bottom with parchment paper. Lightly coat the parchment paper with cooking spray too. Pour the batter into the pan and bake for about 40 minutes, or until a toothpick comes out clean when inserted into the center. Cool and serve plain, or with a dollop of homemade whipped cream.
