I recently had this at my sister-in-law's house (Lynne). It was delicious. Don't let the sugar in the recipe scare you. There was just a hint of sweetness in it. The picture I found on the internet just to show you what is looks like with the husks tied back. Enjoy!
Ingredients:
- 2 tbs butter
- 3/4 c unsweetened coconut milk
- 2 tbs brown sugar
- 2 bay leaves
- 1/4 tsp salt
- 4 ears corn
Directions:
- Combine butter, brown sugar, coconut milk, sal and bay leaves in pan.
- Simmer gently until sugar melts, add more sugar if necessary
- Remove from heat and cool
- Shuck corn ( I leave husks on and tie at the bottom for a handle) and baste with coconut mixture
- Heat grill and put corn on. Baste again and several times as you turn the ears until nicely browned on all sides 8-12 minutes total.
- Baste one final time before removing from grill
