Raw Snap Pea Salad

One of the best things about sugar snap peas is that you eat the entire pod...peas and all!  A huge thank you to Lynn for sending along this recipe for using them without even cooking.


Ingredients:
  • 1 lb. Trimmed sugar snap peas (strings removed if necessary).  Slice 1/4 inch thick on the diagonal.
  • 1 Cup finely chopped red onion
  • 3 Tablespoons fresh lemon juice
  • 2 Tablespoons olive oil
  • Salt and Pepper to Taste
Preparation:

In a large bowl combine all ingredients.  Let stand tossing occasionally for ten minutes.
