Homemade Pea Broth

Don't throw out those pea pods!  They are fibrous and really are not good raw.  Once you shell your peas, put the pods in water and make a flavorful pea broth.  It will be great later when you make pasta with peas or even a pea risotto.  I am also thinking it will be great to use in the winter when I make a ham and pea soup.  Here's what you do...

Ingredients
2 cups coarsely chopped leek greens well rinsed or onions if you don't have the leeks.
2 cups whole empty pea pods
1 bay leaf
2 sprigs of thyme
1 carrot scrubbed and roughly chopped
salt to taste

Preparation
Put all ingredients in a pot add 7 cups of water and bring to a boil.
Lower the heat and simmer for 35 plus minutes.
Strain the liquid and freeze if not using right away.

I have an Instant Pot which I will use for this.  It is one of the best tools in my kitchen.  It is an electric pressure cooker, a slow cooker and a rice cooker all in one.  It is fabulous!
