We are getting Lima beans in our share (that is if Mother Nature does not change our minds!). Some people love them and some people hate them. I found this recipe and thought it might be a great way to cook them.
Drizzle with olive oil and top with shaved parmesan cheese.
Directions:
Toast 3 sliced garlic cloves and a pinch of red pepper flakes in a large skillet with olive oil. Add salt, then stir in a 10-ounce box of thawed frozen lima beans; cook about 7 minutes. (Laura's Note: cook until Lima Beans are tender as we are using fresh ones)
Remove from the heat; add halved cherry tomatoes, sliced basil and a splash of white wine vinegar.
