Ingredients:
- One small zucchini
- Half an onion
- 2 eggs
- 1 tbsp butter
- Salt and pepper
Preparation:
- Slice zucchini into quarter inch pieces, then cut each round slice into six smaller pieces.
- Chop onion.
- Melt butter in frying pan on medium-low heat. Add vegetables. Cook until soft and translucent.
- Add beaten eggs. Scramble mixture until cooked. Add salt and pepper to your liking and enjoy.
