Pam's Zucchini and Scrambled Eggs

Here is a simple recipe for an awesome start to your day or a light evening meal.

Zucchini and scrambled eggs 
Serves 2

Ingredients:
  • One small zucchini
  • Half an onion
  • 2 eggs
  • 1 tbsp butter 
  • Salt and pepper

Preparation:

  1. Slice zucchini into quarter inch pieces, then cut each round slice into six smaller pieces.
  2. Chop onion.  
  3. Melt butter in frying pan on medium-low heat.  Add vegetables.  Cook until soft and translucent.
  4. Add beaten eggs.  Scramble mixture until cooked.  Add salt and pepper to your liking and enjoy.
