Laura's Green Tomatoes with Summer Squash Gratin

I know that some of you still have your green tomatoes in your fridge and you are wondering what to do with them.  Other than frying them I figured there must be a better way.  So I made up a recipe which I thought worked great.  There are of course no specific measurements so be creative with your ingredients and spices.  Use what you like!


Ingredients:
  • Summer squash sliced in rounds (I used yellow from the share and my garden)
  • Green tomatoes sliced 
  • One can of diced tomatoes (I used a can I had with some spices as pictures)
  • Grated cheddar cheese
  • Breadcrumbs mixed with Parmesan cheese
  • Salt, pepper and other seasoning to taste.  I obviously used garlic!

Preparation:
Take the slices of vegetables and layer them in a baking pan.  Top with the tomatoes and cheese. Add the breadcrumb mixture and bake at 400 degrees until golden on top and bubbling on the bottom.  It was great.

One thing I would do differently than pictured is add some more breadcrumbs through the mixture to soak up some of the juices and definitely add more cheese. I highly recommend you try this.  I had a visit from Brad while I was making this and he liked it too!
