Cucamelon Salsa Served over Marinated Grilled Chicken

One Cucamelon!
Yay Cucamelons!  I must admit when they arrived at my office on Friday I had to look up what they were. Thank goodness I was given the name.  I just love everything weird in wonderful in the vegetable world.  I especially love sharing it with with the CSA members.  So here's what I found out...

Cucamelons are also called Mexican Sour Gherkin.  They are incredible, small cucumber-like fruit that are shaped like baby watermelons. They are good added to salads or can be pickled. They have a cucumber-like taste with a touch of lemon. In fact when you try it for the first time your mind thinks it will taste like watermelon but it definitely tastes like cucumbers. My recipe to follow is for a cucamelon salsa!  Thanks to our Lesley (Cheese Expert) for giving me the idea.

In the meantime, before the recipe I wanted to demo one of my kitchen gadgets which made making my salsa so easy. It is my first video so do keep you sense of humor!



Cucamelon Salsa

INGREDIENTS:
  • Cucamelons from the share chopped
  • 2 medium tomatoes, chopped
  • 1 jalapeno pepper, seeded,minced
  • 1 small onion, chopped
  • 1 clove garlic, minced or more to taste.  I used 4 cloves!
  • 2 tablespoons fresh lime juice
  • 1 teaspoon fresh parsley, minced
  • 2 teaspoons fresh cilantro, minced
  • 1/2 teaspoon salt


PREPARATION:
In a medium bowl stir together all ingredients.
Cover and refrigerate at least one hour.

Serve over the marinated grilled chicken below

Marinade for Grilled Chicken:

Throw some garlic, lime juice, lime zest, cilantro and oddly enough a tsp. of brown sugar into blender or in my case a magic bullet!  Pulse until mixed.  Pour over chicken breasts or chicken tenders. Refrigerate for at least two hours.  Then grill!

The finished product was delicious.  The color outstanding! Thank you Leslie for steering me in this direction!  The string beans on the plate were also from our share.
