Beet Greens - Don't Toss Them to the Chickens!

When you're washing and peeling the beets, and you trim off the green leafy tops, don't toss them away! The greens and the stems are edible, and make a great substitute for any green such as spinach, Swiss chard, and bok choy. They can be steamed, sauteed, braised, added to soups, and eaten raw.

Simply saute them in garlic and olive oil and season with salt & pepper and enjoy.  Alternatively Hope and Erin shared a recipe for Hope & Erin's Beet Green Pesto last year.

Martha Stewart recommends that you chop them roughly, add some onion, garlic and bacon and saute.  Do do give it a try!
