Laura's Minestrone Type Soup with Chorizo Sausage

Tonight I just wanted to use what I had in my fridge and make something delicious.  So here's what I did...

Take 1 lb bag of dried giant white beans boiled for two minutes and soaked in the hot liquid for a few hours.  Drain the beans and put in a large pot with chicken stock.  I used a large can.

Next take two chorizo sausages (I had four for another recipe but someone ate two) and remove the casing and slice to desired thickness.

Brown in a pan with a little olive oil and onion, jalapeno pepper and a red pepper.  Add a couple of fresh tomatoes chopped.

Dump this mixture in beans and stock.



As this was simmering and browning etc. I cut up a small sugar pumpkin into chunks and threw that in as well.

Wash some collard greens or kale or whatever you have and chop into bite sized pieces.  Add this to the beans and simmer the entire mixture until the beans are tender.

Season with salt and pepper to taste.  Serve with some grated Parmesan cheese on top.  Delicious!!!!

Remember I used what I had in my fridge and pantry.  Make yours with anything you have.  It would be great with some celery and carrots.  I did not have any!

Note:  Skip the Parmesan cheese.  We had some grated Monterey Jack Cheese and used that it was fabulous!!!
