
Leeks, like garlic and onions, belong to a vegetable family called the Allium vegetables. Since leeks are related to garlic and onions, they contain many of the same beneficial compounds found in these well-researched, health-promoting vegetables. They have a more delicate flavor than onions
Cleaning them is simple especially if you are chopping them like we will in our recipe below.First rinse your leeks under water to remove visible dirt or sand. Cut off the roots and slice them on the diagonal. You can use the entire leek up to the last inch or so. The ends can be a bit tougher but they soften when cooked.
Second put the cut leeks in a large bowl of cold water to rinse again. Lift out of the water and drain. Place in a baggie in the fridge until ready to use.

Ingredients:
Leeks from your share washed and thinly sliced on the diagonal.
Leeks from your share washed and thinly sliced on the diagonal.
Half a stick of butter
Salt and Pepper to taste
Preparation:
In a large saucepan, melt the butter. Add the leeks and S&P and stir until all the leeks are coated. Turn the heat down low and cook for about 15 minutes until they are tender.
It is that simple. You can garnish with sprigs of parsley or thyme if you like as in the picture below.
