Mediterranean Shepherd's Salad by Justine


This crisp, refreshing salad is perfect for a hot August day. Sometimes called “Shepherd’s Salad” on Middle Eastern and Turkish menus, this dish combines three of this week’s CSA ingredients: onions, tomatoes, and cucumbers. Both of the Middle-Eastern seasonings that I used on this salad—za’atar and sumac—are sold at Bishops Orchards! However, if you do not have either on hand, feel free to switch up the flavors. Enjoy!

Ingredients:

Salad:
2 cucumbers, diced
4-6 tomatoes, diced
A few (10-20) cherry tomatoes, halved (optional)
2 onions, diced
Leaves of a few sprigs fresh mint, removed and chopped

Dressing:
Olive Oil (generous drizzle)
Juice of half a lemon
Generous sprinkle za’atar
A dash (about ¼ teaspoon) sumac
Generous pinch salt (to taste)

Preparation:
Combine all salad ingredients in a bowl
Drizzle on olive oil, lemon juice, and the rest of seasonings
Mix and enjoy!
