Corn and cilantro are two ingredients that I immediately associate with Mexican cuisine. In fact, one of Mexico’s most popular street foods is called “street corn,” grilled corn on the cob covered in spices, lime, and cheese. This super-easy dish is my version of the Mexican classic, and I utilized my fresh CSA cilantro to add another level of brightness and zest against the smoky, spicy corn. Enjoy!
Ingredients:
Corn (on the cob)
Butter
Cumin
Southwestern seasoning
Salt
Cilantro
Lime wedges
Cooking spray (for grill)
Preparation:
Heat grill to medium/high heat; spray with cooking spray
Melt a few tablespoons butter in microwave and add generous pinches of cumin and Southwestern seasoning
Place corn on grill; brush with melted butter mixture
Turn corn and brush again with butter every once in a while, until corn is nicely grilled
Take off of heat and place on plate
Sprinkle with salt and more cumin
Sprinkle a generous amount of cilantro on top of corn
Serve with lime wedges
