Blueberry season is one of the best parts of the summer, and
I have been adding the plump, sweet berries left and right to some of my
favorite baking recipes. This week, I made my grandmother’s classic banana
bread recipe, a family favorite, but folded blueberries into the batter to
create a new, fruity treat. Enjoy!
Ingredients:
½ stick butter, softened at room temperature
1 cup sugar
1 egg
3 ripe bananas, cut up
1 and ½ cups flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
1 cup blueberries, washed
Preparation:
Heat oven to 325 degrees
Cream butter and sugar together (in an electric mixer)
Add egg and bananas; combine’
Add flour (gradually), baking soda, salt, and vanilla
extract; combine, but don’t overbeat
FOLD in blueberries (not with mixer)
Pour into a loaf pan; bake for 1 hour
