Zucchini in the Round - Stacked Zucchini Burgers


Many of you received round squash in your tubs and might do so as the weeks continue. The dark ones are called Eight Ball and the lighter colored ones are Cue Ball.  Here are some facts you need to know...

Eight ball squash are a hybrid zucchini variety, with a round shape reminiscent of a billiard ball. It is similar in color and taste to the longer, Italian zucchini. The squash have a shiny, speckled, green skin, and creamy, white flesh. They are firm and very mild-tasting. Eight ball squash may be substituted for zucchini in most recipes. The size and shape of this summer squash variety are ideal for stuffing; slice off the top stem end, scoop out some of the interior and fill with meats, cheeses or nuts and grains. It may also be steamed, baked, roasted or grilled as you would other summer squash. Dice and stir-fry or saute with garlic, onions, fresh herbs and spices. Slice thinly, layer with other sliced summer vegetables and bake. Keep dry and refrigerate until ready to use.



Cue ball Squash are pale green, globe-shaped fruits are good for stuffing or any summer squash recipe --really the same as above.  The third variety shown in the picture and I believe some of you received is called  "One Ball"!

So here's what I did:

Stacked Zucchini Burgers

Slice the squash in 1/5 inch slices, brush with olive oil.  I had my feta pesto from the 
Specialty Share so I brushed it with that.  

Grill on both sides until tender hot but still al dente.  

Stack on with burgers or other vegetables and enjoy. 












I would prefer to stack mine on a large roll but we are trying desperately to be somewhat healthy.  We used turkey burgers (ewwww), grilled tomatoes and the zucchini.  It would definitely taste better with a huge beef burger!  Wine is always good with it!
