
1 cup whole wheat flour
1 cup spelt flour (oat or wheat)
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ cup maple syrup
2 teaspoons vanilla extract
¼ cup applesauce
1 cup blueberries
1 ripe banana mashed
1 cup soy milk (or other non-dairy milk)
Directions
Preheat oven to 400
degrees.
Mix dry ingredients
in a bowl large enough to hold all the ingredients. Mix in the remaining
ingredients taking care not to crush the blueberries. Bake in a greased (or use
paper liners) muffin pan for 25 minutes or until brown.
