Kohlrabi Salad with Dill Vinaigrette


Ingredients
  • 3 to 4 medium kohlrabi (peeled)
  • 1 medium red pepper or green
  • 1 medium carrot
  • 1/2 small onion     
         
Dill Vinaigrette
  • 1/4 cup cider vinegar
  • 2 teaspoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon snipped fresh dill
  • 1/4 teaspoon mustard powder
  • Salt and pepper to taste

Directions
Dice the kohlrabi, pepper, carrot and onions and combine all four ingredients into a large bowl. 
In a seperate container or screw top jar combine all the ingredients to make the dill vinaigretter. Shake well.  Add the dill vinaigrette to the large bowl containing the kohlrabi, pepper, carrot and onion.  Toss gently. Chill for 1-2 hours than serve.
