Hope and Erin Review our Cheese Share thus Far!

Hi there,

I by no means claim to be a cheese expert but am a huge fan. I attend tastings at Caseus in New Haven on a regular basis to be educated and have a fair knowledge so thought I might chime in with my personal thoughts on the share so far.

Gore-Dawn -Zola...great Gorgonzola awesome on burgers and in salads with berries and nuts

Maggie's Round... a great mild cheddar like cheese, mild rind for those who partake ( more on that later) great with meats and bread think cheddar antipasto platter

Beltane Chèvre.... One of the best around, an all time favorite of ours great with just about anything and available at many farmers markets rolled in herbs and spices( eat so much of this we visited the farm and saw all the new kids this year!)

Champlain triple... Only for the brave of heart who enjoy strong goat cheeses, very earthy inside and out

Blue Ledge Crotina... Lovely creamy interior texture with an earthy rind with a bit of funk.

The thing about the rind: some love it and some hate it, all of it is edible, but bear in mind that if you have bad allergies as we do its best avoided, for its there that the "aging" accumulates in the strongest numbers so to speak.

That being said of the selections so far Maggie's round did not elecit the stuffy allergy response that the others did for us.
