OK Tuesday pickup, you are letting the side down here. Last week it was the Chinese Cabbage and today was the bok choy being swapped, returned or given away. Here's why you should keep it.
Bok choy is being recognized more and more often for its standout nutrient richness. This member of the cabbage family is one of our highest nutritionally ranked vegetables and it provides good, very good, or excellent amounts of 21 nutrients. Unlike some other members of the cabbage family, these ranked nutrients include omega-3s, as well as the antioxidant mineral zinc.
Easy Healthy Sauté
Start your Healthy Sauté by heating 1 TBS of broth in a stainless steel skillet over medium heat. Once the broth begins to bubble add onions and sauté stirring frequently. After the onions have cooked for about 5 minutes, you can then add other ingredients such as garlic, or fresh ginger. Once they have had a chance to cook together for just another minute, add other vegetables LIKE YOUR BOK CHOY! This method enables you to have flavorful sautéed vegetables with out heating oil.
