Arabian Fava and Avocado Dip by Justine

 "I absolutely love both hummus and guacamole, so I decided to combine the two! I turned to Middle Eastern flavors to season this dip, because fava beans are such a staple in Egyptian and Mediterranean cuisine. Enjoy!  Justine"

Ingredients:

  • 1 bag CSA fava beans, shelled
  • 1 ripe avocado
  • Olive oil
  • Salt, to taste
  • ½ teaspoon cumin
  • ½ teaspoon Arabic seasoning or Garam Masalsa, (or just use ½ teaspoon more cumin)
  • Dash cinnamon

Preparation:
  1. In a saucepan, bring water to a boil
  2. Add fava beans; turn heat to low and let fava beans simmer for 1 to 2 hours, or until soft, (not falling-apart mushy)
  3. Drain fava beans; let cool
  4. Combine fava beans, avocado, seasonings, (minus salt), and a generous drizzle of olive oil in a food processor
  5. Salt to taste

I made this. Obviously as only I can do, I did not have the Garam Masala so I used Madras Curry, my avocado was not ripe so I used olive oil and tahini paste. It was delicious. Thank you Justine.
