Ingredients:
- 1 bag CSA fava beans, shelled
- 1 ripe avocado
- Olive oil
- Salt, to taste
- ½ teaspoon cumin
- ½ teaspoon Arabic seasoning or Garam Masalsa, (or just use ½ teaspoon more cumin)
- Dash cinnamon
Preparation:
- In a saucepan, bring water to a boil
- Add fava beans; turn heat to low and let fava beans simmer for 1 to 2 hours, or until soft, (not falling-apart mushy)
- Drain fava beans; let cool
- Combine fava beans, avocado, seasonings, (minus salt), and a generous drizzle of olive oil in a food processor
- Salt to taste
