Thai Green Curry Spinach Soup









Ingredients
  • 1 tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp Thai green curry paste
  • fresh spinach, roughly chopped with any rough stems removed ( I added 4cups tightly packed)
  • 1 can coconut milk
  • 4 cups vegetable stock
  • Black pepper
  • 1 can chickpeas
  • 2 tbsp fresh lime juice, or more to taste
  • 3 tbsp chopped cilantro

Directions
In a large pan heat the oil add in the onion and garlic cooking on low to medium heat until soft.  I added the curry paste to the onions and garlic and let it cook for an additional minute before adding the spinach, coconut milk, chickpeas and vegetable stock.   Bring to boil and reduce to a simmer add in the lime juice and chopped cilantro.  Serve and enjoy!
