What do you cook with no power?

I hope you all fared well and did not have too much damage.  I live in Madison off Neck Road and as of today (Thursday) we still don't have any power.  So our choice of food for supper has been limited to the grill.  We obviously decided it was wise to eat from the freezer! 

Hurricane Monday after being told to evacuate we invited 12 people into our home to stay as it was safer with us.  I thankfully put a pulled pork in the slow cooker early on and heated a very delicious Mac and Cheese with apple wood bacon from Bishops.  Just as we were wondering if it was cooked, we lost power.  Night one dinner went just fine.  One pulled pork and some rolls out of the freezer.

Second Night it was hamburgers on hot dog rolls as I did not have any hamburger rolls.  My neighbour brought salad so it would not go bad.  One box of frozen burgers out of the freezer with the hot dog rolls!

Third night it turned cold so I raided my shelves and found a large can of chicken noodle soup which I dressed up with frozen vegetables.  We also had my salsa which I canned earlier on this summer with chips as a starter.  Went out and bought some rolls and cold cuts to have sandwiches too.  Friends went to Bishops and purchased a pie which helped to finish the ice cream. Ice cream now out of the freezer and frozen veggies.  One can soup and jar of salsa used up form the pantry.

Fourth Night turned out to be hot dog night on hamburger rolls!  Yes I found the hamburger rolls. It's amazing what you can find when you actually start using the food in the freezer. I used potatoes from my share and garlic and here's what I did:

WITH GARLIC AND ONION

Ingredients:

  • Potatoes to feed whoever you have.  These can be white or sweet
  • Two white onions or red if that's what is on your counter
  • Cloves of garlic to taste
  • Olive oil
  • Salt and pepper



Take a foil cooking sheet or foil pan and oil the bottom (you can use foil as the bottom too)
Slice the potatoes skin and all about 1/4 inch thick and throw in the pan
Chop the garlic and onions and toss it in the pan with the potatoes
Season with salt and pepper and any other seasonings you like
Cover with foil and pop it on your grill until tender.

I did two of these as I had someone staying who does not like garlic (imagine!)  It took about 30 minutes for them to be cooked through.  Quite delicious if I say so myself!

So we have not used hot dogs, hamburger rolls from freezer and potatoes and garlic from the pantry.

Fifth Night I am fed up.  Robert and I left town (booked weeks ago) and those who were left at the house ordered pizza!
