I wish more people posted to the blog. I'm sure, Laura, that you feel all alone out there, but I enjoy it very much. loved your blog about cooking without power. I toughed it out till late Thursday, and went to a motel for 2 days, then to a relative's for 3 more. we were w/out power for 9 days total, with 2 trees resting on our house.
APPLE TART Preheat oven to 400
1 sheet of puff pastry, thawed according to pkg. directions
1-2 apples, peeled, cored, sliced 1/8" thick
2-3 Tablespoons sugar
creme fraiche, or vanilla ice cream.
Apricot preserves, optional
Roll out pastry on lightly floured board, to 18"x14" and cut out a 10 round with a paring knife
(or I just put the rectangle on a cooky sheet and pinch up the edges a bit)
Arrange apples, overlapping and layering until it is covered, and sprinkle with sugar
Bake approx. 20-25, or until apples are soft
I use a trick from Jacque Pepin, and melt apricot preserves to brush over the tart....delicious
