Roasted Sweet Potatoes

Ingredients
- Red-skinned sweet potatoes (I used the ones I had left)
- olive oil (just enough to toss the potatoes in)
- 2 tablespoons honey (in fact this was from our share as well!)
- Sea Salt
Directions
Preheat oven to 350 degrees F.
Peel and cut the sweet potatoes into chunks about 1".
Line a baking dish with foil (I hate the cleanup!) and add the potatoes with the oil.
Toss around so that the potatoes are coated with the oil.
Sprinkle with the salt, and bake, stirring occasionally, for about 40 minutes.
Heat your honey in the microwave just long enough to make it easy to pour
Pour over the sweet potatoes and bake for a further 15 to 20 minutes until the potatoes are tender.
