Broccoli Rabe-and-Sausage Soup

One of our CSA members asked me to post this recipe from Rachael Ray!  She said she uses this all the time and it is delicious!


Broccoli Rabe-and-Sausage Soup

Ingredients

  • 1 1/4 pounds sweet Italian sausage
  • 1 onion, chopped
  • 1 head broccoli rabe, chopped
  • 2 32 ounce container (8 cups) chicken broth
  • 2 15 1/2 ounce can cannellini beans, rinsed

Directions

  • In a large saucepan, cook the sausage, breaking it up, over medium-high heat until browned, about 10 minutes. Transfer to a paper-towel-lined plate; discard all but 1 tablespoon fat from the saucepan. Add the onion to the saucepan and cook until softened, about 3 minutes. Stir in the broccoli rabe and chicken broth and bring to a simmer; cook for 3 minutes. Stir in the sausage and beans and cook until heated through, about 2 minutes; season with salt and pepper.

I made this recipe and it was delicious. I did however make it a bit thicker and served it over my fresh pasta that I got from my specialty share. My family loved it. I then froze a portion to send back to university with my daughter. Thank you for your recipe!

I found a recipe with similar ingredients, except it's a pasta instead of soup recipe. I tried it, and it was a hit with the whole family (including my 10-year-old).
