Many of you will remember Brooke who used to work for the CSA program.  She posted these recipe ideas for acorn squash.  Like I say, if it ain't broke don't fix it!


Acorn Squash: Sweet or Savory?

CSA Acorn Squash, halved and scooped!

Hi Guys,
 A conversation that often comes up with CSAs is what to do with all the inevitable items you just don't like. Let's face it ... everyone has a few produce items that they just refuse to take. But our philosphy is keep trying... CSA goes 'little engine that could' style. Chances are you have only tried that item one way, and if you tried it again you may discover something that you really love!

For example, here are two totally, dramatically different ways to cook your acorn squash. One way is sweet ...almost candy-like with a maple syrup & dried cranberry glaze, while the other, reccomended to me by Laura!! is savory and full of buttery, caramalized onion flavor. One squash - two very different (but both easy) ways to prepare it. I hope this gives you ideas on what to do with your acorn squash, and also inspires you to give your "no thank you" items another go.


Roasted Acorn Squash Rings with Maple Syrup & Cranberry Glaze


What you need:
  • Acorn Squash, halved and centers scooped out
  • Maple Syrup
  • Butter
  • Dried Cranberries
  • Spices - which ever ones your prefer, I like a little cinnamon and ground cloves
What you do:
  • Pre-heat your oven to 425°
  • Lightly coat a baking sheet with olive oil,
  • Place your halved, scooped acorn squash flesh side down on the baking sheet and bake for about 10-15 minutes or until soft enough to cut through the skin,
  • While the sqaush is in the oven, make your glaze .. melt butter, add maple syrup and whatever spices you choose. I usually jsut wing it..using one part butter : two parts maple syrup and just a dash of each of my spices.
  • When soft enough, take squash halves out of the oven and cut into inch thick slices,
  • Lay the rings onto the baking sheet and paint with your glaze and then sprinkle with dried cranberries,
  • Return to the oven until the rings caramalize ...darken & get soft (about 35-40 minutes)



Laura's Roasted Acorn Squash Halves with onion, butter salt & pepper.

What you need:
  • Acorn squash halved and centers scooped out
  • Olive oil
  • Butter
  • Onion
  • Salt & Pepper
What you do:
  • Pre-heat the oven to 400°
  • Lightly coat a baking sheet with olive oil,
  • Place your halved, scooped acorn squash flesh side down on the baking sheet and bake for about 10-15 minutes or until a little soft,
  • take them off the baking sheet and flip them around so they become little bowls,
  • add butter, onion, salt & pepper and any other seasonings you would like to try and continue baking until golden and soft.
  • Remove from oven and scoop out the soft insides and serve as a side or, just get a spoon & eat it right out of the shell
