So I know potatoes aren't a particularly challenging item, but I made this the other night and thought I would share. It's super easy and looks really nice, so it may come in handy for dinner guest occasions.
I happened to have a sweet potato that I needed to use up, but you can use this same technique with any kind of potato. If you haven't seen it or done it before, it is called "hasselback".
All you have to do is take the ends off of your potato, lay it on a cutting board inbetween two chopsticks, and cut 1/4 inch thick slices all the way accross the potato. The idea is to cut the slices but still have the whole potato along the bottom, so the chopsticks act like a safety guard to prevent cuttting all the way through the potato.
Once you cut your potato, lay in on a baking sheet, drizzel it with olive oile and roast until golden or until your preferred tenderness/crispyness. You can dress it up however you like... I sprinkled with salt & pepper, stuck thin slices of garlic in between every other slice of potato and then draped red onion slices on top/around the potato for added flavor.
