Yes I know I am focused on cucumbers today but I went out in my garden and found some whoppers. I just don't know how it happens. It was tiny yesterday and this morning they are huge! I read this article and thought I would share it with all of you. Our CSA would never give us these but in case you missed one or two in your garden here's an idea!
What to do with too big Cucumbers?
Are you finding too big cucumbers hiding under the plants in the garden and not sure what to do with them since they are very seedy?
There are some uses for large cucumbers which are not fit for a salad. Many grilled meats taste delicious with a yogurt cucumber sauce. Its easy to prepare and you most likely have everything you need in the fridge, except maybe the sour cream.
Just seed your too large cucumber, which is very easy by running a spoon down the center, and then blend the following ingredients together.
1/2 cup of sour cream
3 garlic cloves crushed
1/2 small oniion
4 tablespoons of fresh lemon juice
5-6 fresh mint leaves
Once all the ingredients are blended chill, and serve over any grilled meat, or even some lentil dishes. It beats throwing out those too big cucumbers and is a very tasty sauce.
If you have leftover meat, slice thin and place inside a toasted pita pocket, with tomato, onion, and shredded lettuce. This is an old time favorite for leftovers, AND you didn't waste any produce from your garden.
Those cutting down their fat content could use light yogurt, but Greek yogurt tastes the best.
Another use is making cucumber soup. I love the Ninja for making soups, place the above ingredients for the yogurt sauce and 4 cups of chicken broth in a blender or your Niinja. Blend the ingredients together, and chill. Serve cold with mint leaves on top.
This is for gardeners that might miss a cucumber overgrowing and instead of wasting them, put them to good delicious use.
