Scallions! (good for cooking and playing)

 If you are at all like me then scallions, as well as some other herbs, spices & obscure vegetables, tend to be used once maybe twice, then left to be forgotten in the veggie drawer. I hate doing that!!!! I am determined to find a way to use every scallion I ever own from here on out....even if it means playing with them (friends to the right).

You will be getting another bunch of scallions this week so I thought I'd give you some ideas on what to do with them so you won't waste an inch of 'em.

The photo to the right, while cute, is obviously not the most productive thing to do with your scallions. The website I found it on, however does include a lot of really great recipes that call for scallions...I encourage you to visit the site: thedailypaleo . They suggest using scallions in chicken or tuna salad. They also give recipes for Grilled Cole Slaw, Thai Tomato Scallion Omelette, Ginger Garlic Scallion Crusted Chicken, Mushroom & Scallion Fritatta, Tuna avocado wrap and more.


If none of these ideas do it for you, I also read in a few different places that ginger-scallion sauce is easy to make and tastes great on anything! I found a great recipe by David Chang that was cited in a few different blogs/articles ...

Ginger Scallion Sauce (found on http://www.tastespotting.com)

from Momofuku cookbook by David Chang
makes about 3 cups

Ingredients:

2½ cups thinly sliced scallions (green and whites, from 1-2 large bunches)
½ cup finely minced fresh ginger
¼ cup grapeseed or other neutral oil
1½ teaspoons usukuchi (light soy sauce)
¾ teaspoon sherry vinegar (we didn’t have this so we used mirin – it was fine)
¾ teaspoon kosher salt, more to taste

Directions:

Mix together the scallions, ginger, oil, soy sauce, vinegar, and salt in a bowl. Taste and check for salt, adding more if needed.
**TasteSpotting Kitchen note: David Chang says the Ginger Scallion Sauce is best after sitting 15-20 minutes, but we ate some right away (as noted above). We also ate it later that day, as well as the next day. We are sure it would have tasted awesome the second day, but we ate it all before we could find out.

My last suggestion is to use your scallions in a salad, along with other share items. This Sweet Corn Salad with Black Beans, Scallions & Tomatoes is a home-run in terms of coordinating your share produce.
