Know Your Pears

I am bringing this post back up to the front as Brooke (a previous CSA worker) wrote it back in 2012.  It is still relevant.  Pears are coming!!!!

Bishop's Own Bartlett Pears

Consider this to be the Know Your Apples post part II. I will admit that I do not know as much about pears as I do about apples....but I just picked Brad's brain and here is what I found out.

At Bishop's we grow Bartlett, Bosc, Devoe, Seckel and Moonglow. The photo to the right is of a few bartletts that just came in from the Orchards. Bartlett pears are probably pretty familiar to you, and they are most known for canning. If you have ever had a commercially canned pear then it was a Bartlett.These that I photographed are still pretty unripe...when Bartlett pears ripen they will turn more yellow in color and they will soften up a lot. Actually, Brad was just telling me that when Bartletts get fully ripe it is basically impossible to pick them up without bruising them. This makes them not so great for baking.

In contrast, Bosc pears are a very hard pear which make them fantastic for baking/cooking. Bosc pears are also used in a lot of fruit wines, included our own.

Devoe pears don't really have much of a market but are a nice eating pear. Last year Brad brought up a large wooden crate full of them as an "extra" item. One of our share members took a bunch and made pear jam that he then shared with us ....it was AWESOME, so I am a believer and a fan of Devoe pears being used for jam [to be shared with me] if nothing else.

Moonglow pears are only available through pick-your-own at Bishop's because we only have a few trees. They are fairly regular and not particularly great for one type of thing. They look most like a bartlett pear, in fact it is very difficult to tell them apart.


Bishop's Own Seckel Pears

Seckel pears - to the left - are cute little baby pears that are good for a few different things. Of course for simple snacking, but also for canning, pickling, poaching or .tart-making.
