Yesterday at pick up there were loads of questions about the green tomatoes. I lived in London for the past 25 years and Chutney became a favourite of my family. Chutney refers to a wide-ranging family of condiments from South Asian cuisine that usually contain some mixture of spice(s) and vegetable(s) and/or fruit(s). There are many varieties of chutney. Chutneys are vinegar based so they are used quite successfully with meats and cheeses. So here is my recipe to hep you use some of your green tomatoes.
GREEN TOMATO CHUTNEY | |
5 lb. green tomatoes
1 lb. onions or 2 lg. onions 1 tsp. peppercorns 1 tsp. salt 1 lb. sugar 1 1/2 c. vinegar 1/4 c. raisins
Slice the tomatoes and chop the onions and mix together in a basin with the peppercorns and salt. Allow this to stand overnight. The following day, boil the sugar with the vinegar, then add the chopped raisins.Simmer for 5 minutes, then add the tomatoes and onions and simmer until thick, about 40 minutes. Pour into hot jars and seal.
Do let the chutney sit for several weeks before using it. If yous seal the jars properly it will last for months. COMMENTS: Green tomato chutney is a good way to use green tomatoes leftover at the end of Summer. |
