Another great way to enjoy green tomatoes is fried.
Slice about 1/4" thick, season w/salt and pepper and then dip first in flour, then eggs beaten w/a little milk, and finally unseasoned breadcrumbs (or panko) seasoned w/a bit of parmesan cheese and chili chipolte powder if you like a little kick.
Heat about 3/4" of oil (not olive, it will smoke) until hot and fry 2-3 at a time until golden. drain on paper towels and serve as a veggie side dish or eat them right out of the pan!
