Best Kale Recipe

Best KALE recipe  - from Sherman CT CSA via Gretchen Briggs (sister of Sue Brinigar):

Kale & Ricotta Salata salad
1 lb Kale - stems and ribs removed
2 T shallots, chopped
2 T fresh lemon juice
1/4t salt
1/4t pepper
4 T olive oil
2-4oz coursely grated or chopped ricotta salata (~1 c)

Cut kale crosswise into bite sized pieces.  Whisk together rest of ingredients in large bowl.  Toss kale & ricotta salata in & coat well.  Season with S&P.  Leave out of refrigerator a while so dressing sinks into leaves.      Enjoy!
