A Way to Like Turnips.

Hello! Happy Friday!!

Brooke here - For me, turnips are those root vegetables that only show up once a year at the dinner table on Thanksgiving. I haven't really given them much thought other than that. But I did some exploring and turns out this root vegetable is low in carbs and calories, but high in anti-oxidants, vitamin C, dietary fiber and minerals. So I would say it is worth to hunt down some recipes to use up the turnips, even if you are a little unsure of them.

In addition to grating them into a salad (great recipe idea just posted from Laura), you can also dice or cube them up for roasting, add chunks to a soup/stew, slice them for making baked chips, or even make turnip fries with them!

Here are a couple interesting recipes I stumbled across:

Oven Baked Turnip Chips

Turnip & Sweet Potato Soup

Roasted Turnip with Balsamic & Rosemary

Visit Red Fire Farm recipes and take a look..there are a bunch of recipes using turnips including roasted turnip with cilantro peanut sauce and a turnip puff.

And, my favorite idea.. that I think I will try this weekend:

                                              Parmesan Turnip Fries
                                                        From Bittersweet Farm
Ingredients:

3 Pounds Turnips
1 Tablespoon Oil
1/3 Cup Grated Parmesan Cheese
1 Teaspoon Garlic Salt
1 Teaspoon Paprika
1 Teaspoon Onion Powder

Directions:

1. Preheat oven to 425 degrees F.  For easy clean up and crispier 'fries' line a baking sheet with a piece of aluminum foil and lightly grease.

2. Peel turnips, cut into french fry-sized sticks, about 1/3 by 4 inches.  Place into a large bowl, and toss to coat with oil.

3. Place Parmesan cheese, garlic salt, paprika, and onion powder in a bag and shake to mix.  Place the oiled turnips into the bag, and shake until evenly coated with the spices.

4. Bake in preheated oven until the outside is crispy, and insides are still tender (about 20 min.)
