Roasted Green Tomato Salsa


Hi,  

Rumor has it that we may be getting some of the ingredients in our shares this week.  The recipe below was found online from Zephyr Farms.  


Roasted Green Tomato Salsa

3-4 green tomatoes, cut into 8 wedges each
1 onion, cut into about 12 wedges
4 cloves of garlic, peeled
1 hot pepper, cut into 4 lengthwise slices
salt, pepper and olive oil
scallions or cilantro (optional)
lime juice to taste

Spread the tomatoes, onion, garlic and hot pepper on a baking sheet and drizzle with olive oil and sprinkle with salt and pepper. Roast in a 400 degree oven for 30-40 minutes.

Let cool a bit and then blend in a food processor with lime juice and scallions. Season to taste with salt.

another great way to enjoy green tomatoes is fried. slice about 1/4" thick, season w/salt and pepper and then dip first in flour, then eggs beaten w/a little milk, and finally unseasoned breadcrumbs (or panko) seasoned w/a bit of parmesan cheese and chili chipolte powder if you like a little kick. Heat about 3/4" of oil (not olive, it will smoke) until hot and fry 2-3 at a time until golden. drain on paper towels and serve as a veggie side dish or eat them right out of the pan!
